How to use a sommelier’s corkscrew? Start by removing the paper from around the neck of the bottle. Use the built-in knife to open the cork if it doesn’t have tabs. Once the paper is removed, unfold the worm and the double-hinged corkscrew into a T shape. Next, position the worm on the cork and turn the corkscrew clockwise. Hook the first notch of the lever onto the neck of the bottle, then tighten the lever on the neck with your non-dominant hand and pull the handle with your dominant hand until the cork is no longer in danger of popping out. Once the cork starts to move, hook the second notch of the lever onto the neck to extract it. Gently wiggle the cork from side to side until it comes out; if it doesn’t, pierce the remaining cork with the worm. Finally, twist the cork counterclockwise to remove it from the worm. If any cork fragments have fallen into the bottle, pass the wine through a cloth or strainer to remove them. Fill a wine glass two-thirds full for optimal aroma. While this may seem like a small step, it allows the wine to swirl and concentrates the aromas at the top of the glass, making them easier to smell.
